In the picturesque La Flor del Norte village of Peru's Huabal district, Cajamarca, Elver Coronel's 2-hectare farm stands as a testament to innovation and community-driven coffee production. This small but mighty operation showcases the best of Peruvian coffee, blending traditional farming with modern processing techniques. The high altitude and cool, humid climate of La Flor create ideal conditions for slow cherry maturation, resulting in complex flavor development. Elver's farm, planted with the high-quality Caturra and Bourbon varieties, benefits from this unique terroir. Elver's innovative approach to processing sets his coffee apart: 1. Natural Process: Cherries are floated in tanks immediately after picking, then dried on raised beds for 25-35 days. 2. Washed Process: Cherries rest overnight, are pulped in the morning, then undergo an extended 48-72 hour fermentation due to the cool climate. Drying takes 10-14 days on raised beds and tarpaulin-lined patios.
