Roasters note: I was introduced to Angel at Itacayo via Christopher Feran. I happen to meet Angel at the SCA event in Tokyo September of 2025. He's an absolute gem of a person, he took me around to taste some of his coffee. We immediately decided to buy a small lot and kick off this partnership. I asked for his washed Gesha, and some Paraneima. This is our first purchase in Honduras from an award winning producer. It's been a first where we did not source samples, and then decided, but rather went with our gut feeling.
Angel is the 3rd generation of coffee producers and has worked with coffee processing in the San Vicente mill since his younghood and, for 20 years ago has worked with specialty coffee farmers. In 2007 he bought his first property to make a coffee farm, that same year he planted everything with red Catuai and named the farm "La Colmena", In 2009 he started to produce coffee and prepare his first micro-lot for specialty coffee. Angel has participated in the Cup of Excellence Competition since 2011 and since then he has won important places. In 2018 he bought another property in El Dorado, SB; he named one of its farms "Itacayo", where he planted Geisha and Pacas, in 2021 was his first-time producing coffee from this farm, and now, after 5 years, has a great and consistent coffee.
Washed process: The cherries are picked carefully and transported to the wet mill and are de-pulped every afternoon, then, the parchment is put into fermentation barrels where it is dry fermented for 24 hours. After, the parchment is rinsed into the stainless-steel tanks with clean water four times. Then, the wet parchment is transported from the wet mill to Peña Blanca town where the dry process happens. During the drying, the parchment is sorted by hand to remove defective beans.
