We got to know Liliana Ramírez through a client. Liliana used to work at his place, and one day, while chatting, Felipe found out that Liliana has a coffee farm in Anzá Antioquia. He was really shocked, because Liliana has never tried her own coffee. So Felipe checked where he could get the coffee roasted, found us, and we were mind-blown by the coffee quality.
Since almost two years we’re helping Liliana to sell her outstanding Chiroso coffee, which is stunning in a traditional washed process. We find notes of passionfruit, florals, lemongrass, bright acidity and a beautiful velvet body. Together we improved the consistency of the drying process, implemented floating to get cleaner cups and every harvest is handled with more care for the detail.
The “3 Cochadas” process is super traditional in pretty small-scale farms. Liliana only has around 1.000 coffee trees. She harvests every 2 weeks and usually during three days. She harvests Monday, pulps after floating in the afternoon, harvests Tuesday, pulps after floating, blends it with Monday’s harvest, and harvests Wednesday, pulps after floating and washes all three harvest days on Thursday.
