A Taste of Bedessa: Discovering the Rich Flavours of Guji Coffee
Nestled in the Hambela Wamena region of Guji, lies the town of Bedessa where coffee's more than just a beverage. The locals
take great pride in their coffee production, and the Samii Bedessa Guji Washed coffee is at the heart of it all. Shibiru, the
manager of the local washing station, and Asnake Kasa have worked tirelessly to bring out the best flavours in the beans.
The journey of the Samii Bedessa Guji Washed coffee beans is a complex and meticulous process that starts with the careful
selection of only the best cherries. The cherries are then pulped and the parchment is graded by density. The coffee undergoes a 72-hour wet fermentation process, followed by washing and grading in channels.
Only the highest quality beans are kept, and the coffee is then soaked in clean water for two hours and left to dry in layers over a ten-day period.
Once dried, the coffee undergoes hand sorting for 2-4 hours before being packed in jute bags and stored in the local
warehouse onsite. It will remain here for 1-2 months until it is transported to a warehouse and dry mill in Addis, where it will remain in parchment until it is contracted for shipment.
The end result is the Samii Bedessa Guji Washed coffee, with its distinct notes of grape, cherry, bergamot, and citrus peel,
coupled with intense dark fruit flavors, milk chocolate, nutty notes, and a dry finish. It's not just another coffee, but anexperience that celebrates the intricate processes and the skill of the local producers.
